Busy day, my friends, busy day. Knockin’ out job application stuff like crazy, and I’m about to run some errands before gymming, so I gotta make this snappy.

Somehow I totally spaced on snapping a photo of lunch yesterday. Woopsies. You don’t mind starting with
Dessert
do you?
soooooo-ho-ho random. Randomness has actually been a common theme lately. Groceries are running on the low side.
^That’s pumpkin, cottage cheese, honey, cinnamon, Multigrain Cheerios, and some m&m knock-offs that I picked out of some trail mix.
Snackage
apple-pear hybrid wedgies, cottage chez + cinnamon
I decided to forgo my planned gym trip yesterday in favor of a walk outdoors with my other doggie, Buck. Keep forgetting to take pics of him, but he’s a German Shepherd mix.
When I got home, I decided I had better use up some fresh veg I had in the fridge, or it was going to go bad.
asparagus, zucchini, and squash
and cauliflower. everything was sprayed with olive oil cooking spray and sprinkled with salt and pepper, then tossed around a bit before being popped into the oven at 450* for 20 minutes (thank you, Danielle, for explaining veggie-roasting to me
).

I woke up excited about these, I shit you not. (<—weird saying)
While dem veggies were doin their thang in the oven, I whipped up something else.
Dinner
was freakin’ good
steamed italian blend veggies + split pea soup, topped with melty cheddar cheese and rosemary & olive oil crackas
For whatever reason, all these flavors blended together so well.

Dessert
Apparently, my go-to substitute for greek yogurt (I’m out! Wah!) is cottage cheese…
^that’s drizzled with honey
then I topping-ed the shit out of it
cereals + granola
It was no yogurt mess, but still pretty dang good.
Breakfast

***topped the oats with milk this morning and really liked it! Actually, I’ve done it the past three days, but I really noticed the creaminess this morning for some reason.***

Lunch
I could not wait for some roasted veg in my life today! (there’s hummus under there, and that’s southwest mustard)
forgot to snap a pic before I wrapped up the tortilla, but I added pumpkin seed to the asparagus
and (obviously) added a side salad
the salad had a homemade dressing on it, but it was entirely too runny (see that pool of it near the bottom of the wrap?), so I added straight-up honey mustard to it after about 3 bites
Dessert
I made some almond butter sauce (almond butter + milk) a la Kath to start. Again, too runny, but it was my first try.
cottage cheese, honey, cinnamon, almond butter sauce…I’m not even gonna try to defend this. It really was good, but it admittedly looks disgusting.
Wait, I’m not even done showing you the whole creation yet.
Better?
Multigrain Cheerios and Kashi Go Lean Almond Crunch (that may or may not be exact name…can’t remember and too lazy to go look) were the toppings

It all loooks soooo yummy!!! But do you eat all of this on ONE day, or is this from 2 days??? I am little bit confused now haha..
This post was a little confusing. I started with the dessert I had after lunch from the day before, then snack, *then I showed pics of vegetables I roasted, but didn’t actually eat that night*,then dinner, then another dessert…then I showed breakfast, lunch, and a dessert from the present day…make sense?
1. No problemo on the roasted veggies. They taste amazinggg but sometimes it gets smelly (I’m lookin at you broccoli)
2. Random? Pshhtt who cares it looks awesome

You should seriously give cooking lessons. Because those things you threw together all look so intensely delicious and I never would have thought of any of them!
Oh, wow. I’m flattered. But seriously, I always tell people I don’t know how to cook – because I don’t! Ha. I’m a total novice…just learning as I go.

I just discovered Southwest mustard – it’s awesome on veggies and rice…and pork…and well, everything! And I love that it looks like cheese sauce
