So, I was all pumped this evening because I had plans for grocery shopping (and I looove grocery shopping), but it ended up being a pretty disappointing trip. I went to a new (to me) store, and it made me realize how great Kroger is. Yeah, Kroger’s no Whole Foods, but it has a “natural foods” section or something like that, and I can generally find everything I need. Oh well. Guess I’ll just have to make a real grocery trip tomorrow.
I had to take my car in for an oil change this afternoon, and since I planned to make my grocery trip right after, I packed an afternoon snack. I brought along some string cheese and a Clif Kid’s bar…and never ate them! I was texting like a madwoman the entire time they were working on my car, and I just never got to my snacks. Then I planned on eating them on the way to the grocery store, but forgot! Needless to say, by the time I got home, I was ready for some food in my belly!
I don’t know where I came up with what I made for dinner, but it was GOOD.
First I cooked some “Italian Style” veggies. (That’s what the package said. From what I recall, there were green beans, Lima beans, carrots, cauliflower, and zucchini.) When they were cooked, I turned off the heat and added some fresh mushrooms that needed to be used up.
I poured about half of the veggies on my plate, and half into a bowl.
To the veggies in the bowl, I added some dry roasted edamame (lightly salted) and a scoop of peppadew hummus.
Next, I drizzled some italian dressing on top and mixed it all up.
Finally, I toasted two pieces of whole wheat bread, spread the veggie mixture between them, and stuck the veggie sandwich next to the rest of the veggies.
The veggie concoction squished out the ends of the sandwich, but, folks, this dinner was so good! I thought about buttering the toast, but I’m glad I didn’t because it didn’t need it. The hummus + italian dressing was more than enough flavor, and the bread soaked it up a bit. OMG…it was good, guys.
Dinner is served.
Although my grocery trip was a bit disheartening, I did find something I was excited about.
I’ve had a couple different brands of greek yogurt, but never Chobani! I’ve seen it in blogland and I was excited to try it! Not surprisingly, I liked it. If you’ve never had greek yogurt, it’s A LOT thicker than regular yogurt. In my opinion, Chobani is a little less thick than other greek yogurts, so if you’re thinking of making the switch to greek, this might be a good one to try.
I needed some more fruit in my life today, so, to the yogurt, I added a chopped up clementine. I also threw in some cereal and dark chocolate chips.
